Vanessa's Low Glycemic Load Strawberry Shortcake

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 1/2 cup oat flour
  • 1/4 cup flax seed (ground)
  • 1/4 cup wheat germ (ground)
  • 1/2 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon honey
  • 1/4 cup butter
  • 1/2 cup milk
  • 1/2 quart ripe strawberry, washed, hulled and sliced
  • 1/4 teaspoon vanilla extract
  • 1/2 cup heavy whipping cream
  • 1/8 teaspoon vanilla
  • 1/8 cup sour cream

Recipe

  • 1 mix dry ingrediants with butter to form soft crumbs, stir in milk.
  • 2 drop onto cookie sheet and bake for 15-20 minutes at 450 degrees.
  • 3 chill cream and whip until soft peaks are formed, stir in sour cream and vanilla flavoring.
  • 4 carefully cut shortbread in half once cooled, layer whipped cream and strawberries inside.
