Vanessa's Low Glycemic Load Strawberry Shortcake

Ingredients
- 1/2 cup oat flour
- 1/4 cup flax seed (ground)
- 1/4 cup wheat germ (ground)
- 1/2 tablespoon baking powder
- 1/4 teaspoon salt
- 1 tablespoon honey
- 1/4 cup butter
- 1/2 cup milk
- 1/2 quart ripe strawberry, washed, hulled and sliced
- 1/4 teaspoon vanilla extract
- 1/2 cup heavy whipping cream
- 1/8 teaspoon vanilla
- 1/8 cup sour cream
Recipe
- 1 mix dry ingrediants with butter to form soft crumbs, stir in milk.
- 2 drop onto cookie sheet and bake for 15-20 minutes at 450 degrees.
- 3 chill cream and whip until soft peaks are formed, stir in sour cream and vanilla flavoring.
- 4 carefully cut shortbread in half once cooled, layer whipped cream and strawberries inside.
