Strawberry Meringue Pudding

Ingredients

- 2 eggs, separated
- 3 cups sliced strawberries
- 1/2 cup confectioners' sugar
- 1 cup milk
- 1 cup cake or 1 cup cookie crumbs
- 4 tablespoons sugar
Recipe
- 1 preheat oven to 375 degrees f.
- 2 place strawberries in a 2-quart baking dish.
- 3 sift confectioner's sugar over strawberries.
- 4 heat milk and beat in the 2 egg yolks.
- 5 mix well, then add cake or cookie crumbs.
- 6 spread over strawberries.
- 7 bake for 20 to 25 minutes.
- 8 lower oven temperature to 275 degrees f.
- 9 beat egg whites until stiff.
- 10 fold in the 4 tablespoons sugar.
- 11 pile meringue on pudding and return to oven for about 15 minutes.
