Weight Watchers Spaghetti Tofu Vegetable Pie (3 Points)

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 1 teaspoon olive oil
  • 1 bell pepper (chopped)
  • 1 onion (chopped)
  • 1/2 cup portabella mushroom (chopped)
  • 12 ounces tomato sauce
  • 6 ounces firm tofu (drained and crumbled)
  • 2 cups spaghetti (cooked)
  • 3/4 cup fat free mozzarella cheese

Recipe

  • 1 saute veggies in oil.
  • 2 add tomato sauce and tofu.
  • 3 bring to boil.
  • 4 simmer for 10 minutes.
  • 5 coat pie plate with cookie spray.
  • 6 arrange spaghetti in bottom and up sides.
  • 7 pour in sauce mixture.
  • 8 add cheese.
  • 9 bake 375 for 20 minutes.
