Swedish Coconut Cookies

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 1 cup crisco shortening
  • 1 cup butter, softened (no substitutions)
  • 2 cups sugar
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup shredded coconut
  • 1 teaspoon vanilla
  • 1 1/2 walnuts, chopped (optional)

Recipe

  • 1 set oven to 350 degrees.
  • 2 cream butter, shortening and sugar with vanilla.
  • 3 sift the flour, baking soda and baking powder.
  • 4 add the flour mixture to the butter mixture along with the coconut and nuts (if using).
  • 5 mix to form a roll.
  • 6 chill in the fridge for 2 or more hours.
  • 7 slice and bake on a greased cookie sheet or drop by teaspoonfuls onto cookie sheet.
  • 8 bake for 8-10 minutes, or until lightly brown.
