Swedish Coconut Cookies

Ingredients
- 1 cup crisco shortening
- 1 cup butter, softened (no substitutions)
- 2 cups sugar
- 3 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup shredded coconut
- 1 teaspoon vanilla
- 1 1/2 walnuts, chopped (optional)
Recipe
- 1 set oven to 350 degrees.
- 2 cream butter, shortening and sugar with vanilla.
- 3 sift the flour, baking soda and baking powder.
- 4 add the flour mixture to the butter mixture along with the coconut and nuts (if using).
- 5 mix to form a roll.
- 6 chill in the fridge for 2 or more hours.
- 7 slice and bake on a greased cookie sheet or drop by teaspoonfuls onto cookie sheet.
- 8 bake for 8-10 minutes, or until lightly brown.
