Rustic Vegetable Baguette With Smashed Avocado

Total Time: 18 mins Preparation Time: 15 mins Cook Time: 3 mins

Ingredients

  • Servings: 4
  • 1 lb rustic sourdough baguette
  • 1/3 cup italian dressing
  • 2 small ripe avocados, pitted and peeled
  • 4 small tomatoes, sliced
  • 6 ounces sliced cheddar cheese

Recipe

  • 1 cut bread horizontally in half.
  • 2 drizzle dressing on cut side of top half of bread.
  • 3 place both halves on large cookie sheet.
  • 4 mash avocados until slightly smooth.
  • 5 spread avocado over bottom half of bread; top with tomato slices and cheese.
  • 6 broil with tops 4 to 6 inches from heat 2 to 3 minutes or until cheese is melted and bread is slightly golden brown.
  • 7 top with top half of bread.
  • 8 cut loaf into 4 pieces.
