Rolled Oatmeal Cookies

Ingredients
- 1 1/2 cups rolled oats
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup butter
- 1 cup granulated sugar
- 1/2 cup firmly packed brown sugar
- 1 egg, beaten
- 1 teaspoon vanilla
- 1/2 cup flaked coconut
Recipe
- 1 preheat oven to 360°f.
- 2 in a medium bowl, combine rolled oats, flour, baking soda, and baking powder and set aside.
- 3 in a large bowl, cream together butter and the two sugars until fluffy. beat in egg until blended and add vanilla and coconut and mix well.
- 4 add to dry ingredients just until blended.
- 5 shape into 5cm (2") balls.
- 6 arrange on ungreased cookie sheet and space about 5cm apart and flatten with floured fork tines.
- 7 bake for 10-12 minutes or until golden brown.
