Toasted Oatmeal Cookies

Total Time: 35 mins Preparation Time: 25 mins Cook Time: 10 mins

Ingredients

  • Servings: 40
  • 2 1/2 cups quick-cooking oats
  • 1 cup finely chopped walnuts
  • 1 1/2 cups packed brown sugar
  • 1 cup butter, softened
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cardamom (optional)
  • 1/4 teaspoon salt

Recipe

  • 1 heat oven to 350ºf.
  • 2 evenly spread oats and walnuts in ungreased jelly roll pan. bake 15 to 20 minutes, stirring occasionally, until light brown; cool completely.
  • 3 beat together brown sugar, butter, vanilla and eggs in large bowl.
  • 4 gradually add in the flour, baking soda, cinnamon, cardamom, and salt.
  • 5 stir in the toasted oatmeal/walnut mixture.
  • 6 drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheets.
  • 7 bake 8 to 10 minutes or until golden brown. cool about 2 minutes before removing from cookie sheets to cool on a wire rack.
