Sweet Potato Crunchies

Ingredients
- 3 cups sweet potatoes
- 1 tablespoon margarine
- 1/3 cup brown sugar
- 1/4 cup chopped pecans
- 1 teaspoon vanilla
- 2 tablespoons flour
- 1/4 teaspoon cinnamon
- 1 large egg
- 3 cups crushed corn flakes
Recipe
- 1 preheat oven to 325 degrees. spray baking sheet with non-stick spray.
- 2 in a large bowl place: sweet potatoes, margarine, brown sugar, pecans, vanilla, flour and cinnamon. mix well.
- 3 beat in the egg.
- 4 form mixture into bite sized balls.
- 5 roll balls in crushed corn flakes.
- 6 place sweet potato balls on cookie sheet.
- 7 bake for about 20 minutes.
- 8 serve with toothpicks.
