Sweet Potato Cookies

Ingredients

• 1/2 cup margarine
• 1 banana, ripe
• 1 teaspoon vanilla
• 1 cup sugar
• 1 large sweet potato
• 1 teaspoon salt
• 2 eggs
• 4 teaspoons baking powder
• 1 teaspoon cinnamon
• 2 cups flour

Recipe

• 1 boil, drain, and mash the sweet potato. you should have about 2 cups.
• 2 preheat oven to 350°f.
• 3 in a large bowl, mash the banana.
• 4 cream margarine and sugar with the banana.
• 5 beat eggs, add to creamed mixture, and stir well.
• 6 stir in sweet potato and vanilla.
• 7 combine dry ingredients, and add to sweet potato mixture.
• 8 drop onto greased cookie sheet.
• 9 bake 12-15 minutes, until lightly browned.
