Trail Mix Cookies

Total Time: 32 mins Preparation Time: 20 mins Cook Time: 12 mins

Ingredients

  • 1/3 cup sucanat
  • 3 egg whites
  • 2 tablespoons olive oil
  • 3 tablespoons unsweetened applesauce
  • 1 teaspoon vanilla
  • 2 tablespoons natural-style peanut butter
  • 1/3 cup dried cranberries
  • 1 cup whole wheat flour
  • 3/4 cup wheat bran
  • 1/4 cup unsweetened coconut
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 cup ground flax seeds
  • 1/4 cup slivered almonds
  • 1/4 cup dark chocolate chips (mini)

Recipe

  • 1 mix first 7 ingredients in a medium sized bowl.
  • 2 mix flour and remaining ingredients in another bowl leaving aside the slivered almonds & chocolate chips. combine wet ingredients with dry and then stir in chocolate chips and almonds.
  • 3 roll into balls and place on a lightly greased baking sheet.
  • 4 bake at 350 for 12 -13 minutes.
