Whole Wheat Cherry Dark Chocolate Almond Cookies

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • 3/4 cup sugar (i use sugar in the raw)
  • 1/4 cup brown sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (i use a 1/2 tsp..we like cinnamon!)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup whole wheat flour
  • 1 1/4 cups quick-cooking oats (not instant)
  • 3/4 cup dried cherries, coarsely chopped
  • 1/2-2/3 cup sliced almonds
  • 6 ounces dark chocolate, coarsely chopped

Recipe

  • 1 preheat oven to 375
  • 2 in a large bowl combine sugar, brown sugar, and butter; mix well to cream together.
  • 3 add in egg and vanilla extract, mix well.
  • 4 add cinnamon, baking soda, salt, and flour, mix well.
  • 5 fold in oatmeal, dried cherries, almonds, and dark chocolate - making sure that all ingredients are uniformly distributed (will be rather crumbly).
  • 6 roll or smoosh into ball like shapes and place on a greased cookie sheet, bake for 9-11 minutes, until edges are golden/brown
  • 7 remove from oven and let cool on sheet 2-3 minutes, transfer to cooling rack.
