Soft Raisin Cookies

Total Time: 32 mins Preparation Time: 20 mins Cook Time: 12 mins

Ingredients

  • 1 cup water
  • 2 cups raisins
  • 1 cup shortening or 1 cup butter
  • 1 3/4 cups sugar
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 3 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup chopped walnuts (optional)

Recipe

  • 1 combine raisins and water in a small saucepan; bring to a boil and cook for three minutes.
  • 2 remove from the heat and let cool but do not drain.
  • 3 in a mixing bowl, cream shortening or butter with sugar.
  • 4 add eggs and vanilla.
  • 5 mix dry ingredients together and gradually add to creamed mixture.
  • 6 blend thoroughly.
  • 7 stir in nuts and raisins, along with the water the raisins were boiled inches.
  • 8 drop by spoonfuls onto greased baking sheets.
  • 9 bake at 350° for 12-14 minutes.
