Soft Raisin Cookies

Ingredients
- 1 cup water
- 2 cups raisins
- 1 cup shortening or 1 cup butter
- 1 3/4 cups sugar
- 2 large eggs, lightly beaten
- 1 teaspoon vanilla extract
- 3 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup chopped walnuts (optional)
Recipe
- 1 combine raisins and water in a small saucepan; bring to a boil and cook for three minutes.
- 2 remove from the heat and let cool but do not drain.
- 3 in a mixing bowl, cream shortening or butter with sugar.
- 4 add eggs and vanilla.
- 5 mix dry ingredients together and gradually add to creamed mixture.
- 6 blend thoroughly.
- 7 stir in nuts and raisins, along with the water the raisins were boiled inches.
- 8 drop by spoonfuls onto greased baking sheets.
- 9 bake at 350° for 12-14 minutes.
