Soft Lemon Drops

Total Time: 55 mins Preparation Time: 30 mins Cook Time: 25 mins

Ingredients

  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1/2 cup sour cream
  • 2 eggs
  • 2 teaspoons lemon peel, grated
  • 1/2 teaspoon lemon extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup powdered sugar
  • 1 -2 tablespoon lemon juice

Recipe

  • 1 heat oven to 350ºf.
  • 2 combine sugar and butter in large mixer bowl.
  • 3 beat at medium speed, scraping bowl often, until creamy.
  • 4 add sour cream, eggs, lemon peel and lemon extract; continue beating until well mixed.
  • 5 reduce speed to slow; add flour, baking powder and salt.
  • 6 beat until well mixed.
  • 7 drop dough by rounded teaspoonfuls 2 inches apart onto greased cookie sheets.
  • 8 bake for 10 to 12 minutes or until lightly browned.
  • 9 cool completely.
  • 10 combine powdered sugar and enough lemon juice for desired glazing consistency in small bowl.
  • 11 glaze cooled cookies.
