The Almost Anzac Biscuit

Ingredients
- 12 tablespoons butter, unsalted
- 3/4 cup all-purpose flour
- 1/4 cup flax seed
- 1 cup sugar
- 1 cup coconut, unsweetened, shredded, toasted
- 1 cup rolled oats
- 1 tablespoon honey
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Recipe
- 1 heat oven to 350°f line cookie sheet with parchment paper.
- 2 in a small sauce pan, melt butter over medium heat. add honey and baking soda to the butter and stir well. remove from heat and set aside.
- 3 mix the flour, flax seed, oats, sugar, coconut and salt in a bowl.
- 4 add the melted butter to the dry ingredients and stir to combine.
- 5 roll dough into 12 balls and flatten with bottom of glass. place on cookie sheet 2" apart.
- 6 bake for 10-12 minutes or until golden brown. remove from oven and cool on sheet for 5 minutes.
- 7 remove to wire rack to cool completely.
