The Almost Anzac Biscuit

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • 12 tablespoons butter, unsalted
  • 3/4 cup all-purpose flour
  • 1/4 cup flax seed
  • 1 cup sugar
  • 1 cup coconut, unsweetened, shredded, toasted
  • 1 cup rolled oats
  • 1 tablespoon honey
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Recipe

  • 1 heat oven to 350°f line cookie sheet with parchment paper.
  • 2 in a small sauce pan, melt butter over medium heat. add honey and baking soda to the butter and stir well. remove from heat and set aside.
  • 3 mix the flour, flax seed, oats, sugar, coconut and salt in a bowl.
  • 4 add the melted butter to the dry ingredients and stir to combine.
  • 5 roll dough into 12 balls and flatten with bottom of glass. place on cookie sheet 2" apart.
  • 6 bake for 10-12 minutes or until golden brown. remove from oven and cool on sheet for 5 minutes.
  • 7 remove to wire rack to cool completely.
