Wheat-free Soft And Spicy Molasses Cookies

Ingredients
- 1/4 cup margarine or 1/4 cup butter
- 1 medium egg
- 1 cup brown rice flour
- 1 cup spelt flour
- 1 cup old fashioned oats
- 1/2 cup molasses
- 1/4 cup dark brown sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ginger
- 1/2 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1 pinch nutmeg
- 1 pinch cayenne pepper
Recipe
- 1 preheat oven to 350 degrees.
- 2 cream the butter, sugar, and mollases in a mixer on medium speed.
- 3 reduce speed to slow.
- 4 slowly add in other wet ingredients, followed by the dry ingredients.
- 5 grease a cookie sheet.
- 6 drop the batter by tablespoons onto the cookie sheet.
- 7 bake for 10-15 minutes in the 350 degree oven.
- 8 allow to the cookies to cool before removing them from the sheet.
