Wheat-free Soft And Spicy Molasses Cookies

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1/4 cup margarine or 1/4 cup butter
  • 1 medium egg
  • 1 cup brown rice flour
  • 1 cup spelt flour
  • 1 cup old fashioned oats
  • 1/2 cup molasses
  • 1/4 cup dark brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ginger
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 pinch nutmeg
  • 1 pinch cayenne pepper

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 cream the butter, sugar, and mollases in a mixer on medium speed.
  • 3 reduce speed to slow.
  • 4 slowly add in other wet ingredients, followed by the dry ingredients.
  • 5 grease a cookie sheet.
  • 6 drop the batter by tablespoons onto the cookie sheet.
  • 7 bake for 10-15 minutes in the 350 degree oven.
  • 8 allow to the cookies to cool before removing them from the sheet.
