Soft Beet And Cumin Cookies

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • 1/2 beet, cooked
  • 1 1/2 cups flour
  • 4 ounces parmesan cheese, grated
  • 1 egg
  • 2 tablespoons olive oil
  • 1 teaspoon cumin powder
  • 1 tablespoon cumin seed

Recipe

  • 1 peel and grate the beet, if you have not already done so when you cooked the beet.
  • 2 place all ingredients into a food processor or blender. blend to a smooth dough.
  • 3 roll the dough into a cylinder shape and cover with plastic wrap. freeze for 30 minutes.
  • 4 preheat oven to 350 degrees f. slice the dough into disks and place on baking sheet covered with parchment paper. bake for 10 minutes. cool on baking rack.
