Soft Beet And Cumin Cookies

Ingredients
- 1/2 beet, cooked
- 1 1/2 cups flour
- 4 ounces parmesan cheese, grated
- 1 egg
- 2 tablespoons olive oil
- 1 teaspoon cumin powder
- 1 tablespoon cumin seed
Recipe
- 1 peel and grate the beet, if you have not already done so when you cooked the beet.
- 2 place all ingredients into a food processor or blender. blend to a smooth dough.
- 3 roll the dough into a cylinder shape and cover with plastic wrap. freeze for 30 minutes.
- 4 preheat oven to 350 degrees f. slice the dough into disks and place on baking sheet covered with parchment paper. bake for 10 minutes. cool on baking rack.
