Spinach Loaf

Ingredients

- 1 loaf french bread
- 1 onion, chopped
- 1 tablespoon parmesan cheese
- 1 large tomato, chopped
- 1 tablespoon italian seasoning
- 3 tablespoons olive oil
- 1 (9 ounce) package frozen spinach, thawed and drained
- 1 teaspoon fennel
- 6 ounces mozzarella cheese, shredded
Recipe
- 1 heat oven to 400°f.
- 2 cut bread lengthwise in half and place on a cookie sheet cut side up.
- 3 heat oil over medium heat. add onion and garlic. cook 4 minutes.
- 4 add spinach, heat 1 minute.
- 5 remove from heat and stir in parmesan, italian seasoning, and fennel.
- 6 spread mixture evenly over bread.
- 7 sprinkle with tomatoes and mozzarella.
- 8 bake 10 minutes or until browned and bubbly.
