Rum Raisin Sandwich Cookies

Ingredients

- 1 cup powdered sugar
- 1 cup butter
- 1 egg
- 2 1/2 cups flour
- 1/4 teaspoon cream of tartar
- 1 cup raisins, finely chopped
- 2 cups powdered sugar
- 1/4 cup butter, softened
- 2 tablespoons milk
- 1/4 teaspoon rum extract
Recipe
- 1 mix powdered sugar, butter and egg.
- 2 stir in remaining ingredients except rum filling.
- 3 divide dough in half.
- 4 shape each half into a roll, 10" long.
- 5 wrap and refrigerate 2 hours or until firm.
- 6 cut rolls into 1/4" slices.
- 7 bake at 375°f for 7-9 minutes on ungreased cookie sheet.
- 8 cool completely.
- 9 prepare rum filling.
- 10 put cookies together with 1 teaspoon filling each.
