Rum Raisin Sandwich Cookies

Total Time: 1 hr 50 mins Preparation Time: 1 hr 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 36
  • 1 cup powdered sugar
  • 1 cup butter
  • 1 egg
  • 2 1/2 cups flour
  • 1/4 teaspoon cream of tartar
  • 1 cup raisins, finely chopped
  • 2 cups powdered sugar
  • 1/4 cup butter, softened
  • 2 tablespoons milk
  • 1/4 teaspoon rum extract

Recipe

  • 1 mix powdered sugar, butter and egg.
  • 2 stir in remaining ingredients except rum filling.
  • 3 divide dough in half.
  • 4 shape each half into a roll, 10" long.
  • 5 wrap and refrigerate 2 hours or until firm.
  • 6 cut rolls into 1/4" slices.
  • 7 bake at 375°f for 7-9 minutes on ungreased cookie sheet.
  • 8 cool completely.
  • 9 prepare rum filling.
  • 10 put cookies together with 1 teaspoon filling each.
