Vegan Snowball Cookies

Ingredients
- 1 cup margarine
- 1/4 cup granulated sugar
- 2 teaspoons almond extract
- 2 cups all-purpose flour
- 2 cups pecans, finely chopped
- 2 cups confectioners' sugar
Recipe
- 1 preheat the oven to 300* f.
- 2 cream the sugar, almond extract and "butter" until light and fluffy.
- 3 add the flour and mix throughly. add the chopped nuts and mix well until blended.
- 4 measure out generously rounded teaspoons of batter and roll them into neat balls. place the balls 1" apart on a non-stick cookie sheet.
- 5 bake for 30 minutes or until light golden brown.
- 6 roll the cookies in confectioner's sugar while still warm.
