Chocolate Pistachio Cookies

Ingredients

  • 1 cup butter, softened
  • 1 1/2 cups brown sugar, firmly packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon orange extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 (12 ounce) bag chocolate chips
  • 1 cup quick-cooking oats
  • 1 cup pistachios, chopped

Recipe

  • 1 preheat oven to 350. line baking sheets with parchment paper.
  • 2 in large bowl, beat butter and sugar at medium speed with an electric mixer until fluffy. add eggs, one at a time, beating well after each addition. beat in vanilla and orange extracts.
  • 3 in medium bowl, combine flour, baking soda, baking powder and salt; gradully add to butter mixture, beating until combined. beat in chocolate morsels, oats and pistachios.
  • 4 drop by heaping tablespoonfuls onto prepared baking sheets. bake 10-12 minutes or until lightly browned. let cool on pans for 2 minutes before removing to racks to cool completely. store in airtight containers.
