Vegan Wheat-free Chocolate Chip Cookies

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1 3/4 cups oat flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup brown sugar
  • 1/2 cup sugar
  • 1/3 cup canola oil or 1/3 cup melted margarine
  • 1 tablespoon flax seed meal
  • 1/4 cup soymilk
  • 1 teaspoon vanilla
  • 3/4 cup chocolate chips

Recipe

  • 1 preheat oven to 375ΓΆΒΊ.
  • 2 sift together oat flour, soda and salt.
  • 3 in a seperate bowl, combine the flax meal and soymilk.
  • 4 add sugar, vanilla and oil and mix until well combined.
  • 5 fold wet ingredients into dry.
  • 6 fold in chocolate chips.
  • 7 drop dough by tablespoons onto an ungreased baking sheet, leaving about 1 1/2 inches between cookies.
  • 8 bake 12-15 minutes until golden.
  • 9 remove from oven and let cool slightly on the pan, then remove with a spatula and let cool completely on a cooling rack.
