Tomato And Mushroom Focaccia

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 tablespoon olive oil
  • 6 ounces cremini mushrooms, sliced
  • 1 (16 ounce) focaccia bread (10-12 inch)
  • 1 cup shredded reduced-fat mozzarella cheese
  • 1 (14 1/2 ounce) can diced tomatoes, drained
  • 2 -3 tablespoons chopped fresh basil

Recipe

  • 1 heat oven to 350.
  • 2 in 8 inch skillet, heat oil over medium heat. cook mushrooms in oil until tender. drain if necessary.
  • 3 place bread on cookie sheet. sprinkle 3/4 cup of the cheese on the bread.
  • 4 top with mushrooms and tomatoes. sprinkle with remaining 1/4 cup cheese.
  • 5 bake 15-20 minutes or until cheese is melted and bread is hot.
  • 6 sprinkle with the chopped basil.
