Tomato And Mushroom Focaccia

Ingredients
- 1 tablespoon olive oil
- 6 ounces cremini mushrooms, sliced
- 1 (16 ounce) focaccia bread (10-12 inch)
- 1 cup shredded reduced-fat mozzarella cheese
- 1 (14 1/2 ounce) can diced tomatoes, drained
- 2 -3 tablespoons chopped fresh basil
Recipe
- 1 heat oven to 350.
- 2 in 8 inch skillet, heat oil over medium heat. cook mushrooms in oil until tender. drain if necessary.
- 3 place bread on cookie sheet. sprinkle 3/4 cup of the cheese on the bread.
- 4 top with mushrooms and tomatoes. sprinkle with remaining 1/4 cup cheese.
- 5 bake 15-20 minutes or until cheese is melted and bread is hot.
