The Martine Inn Zucchini Cookies

Ingredients

  • Servings: 48
  • 1 cup sugar
  • 1/2 cup butter (no substitutions)
  • 1 egg, beaten
  • 1 cup zucchini or 1 cup summer squash, grated
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon clove
  • 1 cup raisins
  • 1 cup walnuts, chopped

Recipe

  • 1 preheat oven to 375f and lightly grease cookie sheets.
  • 2 in a large bowl, combine sugar and butter; beat well until fluffy.
  • 3 add egg and beat well.
  • 4 stir in zucchini.
  • 5 in another bowl, sift dry ingredients together.
  • 6 add to butter mixture and blend well.
  • 7 stir in raisins and nuts.
  • 8 drop by teaspoonful onto prepared baking sheet about 2" apart.
  • 9 bake for 10 to 12 minutes or until golden brown.
  • 10 remove to a cooling rack.
  • 11 when cool, store in a tightly covered container.
