The Martine Inn Zucchini Cookies

Ingredients

- 1 cup sugar
- 1/2 cup butter (no substitutions)
- 1 egg, beaten
- 1 cup zucchini or 1 cup summer squash, grated
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon clove
- 1 cup raisins
- 1 cup walnuts, chopped
Recipe
- 1 preheat oven to 375f and lightly grease cookie sheets.
- 2 in a large bowl, combine sugar and butter; beat well until fluffy.
- 3 add egg and beat well.
- 4 stir in zucchini.
- 5 in another bowl, sift dry ingredients together.
- 6 add to butter mixture and blend well.
- 7 stir in raisins and nuts.
- 8 drop by teaspoonful onto prepared baking sheet about 2" apart.
- 9 bake for 10 to 12 minutes or until golden brown.
- 10 remove to a cooling rack.
- 11 when cool, store in a tightly covered container.
