Vegetable Cookies

Ingredients
- 1/2 cup carrots or 1/2 cup peas or 1/2 cup mixed vegetables, boiled
- 1/2 cup cheddar cheese, shredded
- 1/2 cup margarine or 1/2 cup butter
- 1 cup whole wheat flour
- 2 -3 tablespoons milk (as much as it takes, usually 2-3 tablespoons)
Recipe
- 1 boil the vegetables; make sure you overcook them (you want to be able to mash them).
- 2 in a bowl, mix the cheese with the margarine or butter; add mashed vegetables and flour; slowly add milk.
- 3 form into a dough.
- 4 place in the freezer for 1 hour.
- 5 open the dough and with a cookie cutter form into shapes.
- 6 bake at 350 degrees fahrenheit for about 15 to 20 minutes.
- 7 let them cool and enjoy.
- 8 makes about 20 to 25, depending on the size of the shapes.
