Triple Chocolate Truffle Cookies

Ingredients

  • Servings: 36
  • 4 ounces unsweetened chocolate (chopped)
  • 2 cups semi-sweet chocolate chips (divided in half)
  • 6 tablespoons butter
  • 3 eggs
  • 1 cup splenda sugar blend for baking
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Recipe

  • 1 in the microwave, melt unsweetened chocolate, 1 cup of the chocolate chips, and the butter stirring occasionally until smooth. remove from the microwave and set aside to cool.
  • 2 in a large bowl, whip eggs and splenda until thick and pale, about 2 minutes.
  • 3 stir in the vanilla and the chocolate mixture until well mixed.
  • 4 combine the flour, cocoa, baking powder and salt; gradually stir into the chocolate mixture.
  • 5 fold in remaining 1 cup chocolate chips. cover dough and chill for at least an hour or overnight.
  • 6 roll the chilled dough into small balls and place on an ungreased cookie sheet 2 inches apart.
  • 7 bake for 9 minutes in a preheated 350°f oven. allow cookies to cool before enjoying.
