Thin Mints (gluten-free)

Total Time: 8 mins Preparation Time: 3 mins Cook Time: 5 mins

Ingredients

  • 6 ounces milk chocolate
  • 1 teaspoon mint extract (or more to taste)
  • 20 gluten-free crackers

Recipe

  • 1 microwave chocolate until melted. mix until no lumps remain.
  • 2 add mint extract and stir thoroughly.
  • 3 dip crackers one at a time in chocolate-mint mixture, making sure to cover both sides completely. (i used tweezers so as to not cover my hands in chocolate).
  • 4 place chocolate dipped crackers on wax paper to harden. 6oz chocolate may make more cookies than 20.
  • 5 chill to speed up hardening.
