Thin Mints (gluten-free)

Ingredients
- 6 ounces milk chocolate
- 1 teaspoon mint extract (or more to taste)
- 20 gluten-free crackers
Recipe
- 1 microwave chocolate until melted. mix until no lumps remain.
- 2 add mint extract and stir thoroughly.
- 3 dip crackers one at a time in chocolate-mint mixture, making sure to cover both sides completely. (i used tweezers so as to not cover my hands in chocolate).
- 4 place chocolate dipped crackers on wax paper to harden. 6oz chocolate may make more cookies than 20.
- 5 chill to speed up hardening.
