Thin Chocolate Cookies

Total Time: 42 mins Preparation Time: 30 mins Cook Time: 12 mins

Ingredients

  • 1 cup all-purpose flour, sifted
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 10 ounces sugar, softened
  • 6 ounces unsalted butter, softened
  • 2 eggs
  • 2 vanilla beans, split and scraped
  • 4 ounces walnuts, chopped
  • 4 ounces gourmet baking cocoa

Recipe

  • 1 1 in small bowl, whisk together flour, salt and baking soda and set aside.
  • 2 2 in another bowl, combine sugar and butter, mixing on low speed 1 - 2 minutes.
  • 3 3 add in eggs and scraped vanilla beans, mix well.
  • 4 4 add flour mixture in small amounts mixing thoroughly after each addition.
  • 5 5 add the walnuts and the cocoa and continue to mix until all the ingredients are incorporated.
  • 6 6 place the dough in the fridge for 30 minutes.
  • 7 7 preheat oven 325 degrees fahrenheit.
  • 8 8 line a baking sheet with parchment paper or a silicone mat.
  • 9 9 divide the dough into 1 tbsp portions rolled into balls
  • 10 10 transfer to the lined baking sheets spacing about 3” apart.
  • 11 11 flatten with the bottom of a glass dusted with powdered sugar to 1/3 “ thickness.
  • 12 12 bake for about 12 minutes rotating half way through.
