Walnut Cookies

Ingredients
- 1 large egg
- 1 large egg yolk
- 1/2 cup caster sugar (4 oz)
- 1/2 teaspoon vanilla extract
- 2 tablespoons all-purpose flour, sifted
- 1 1/4 cups chopped walnuts (5 oz)
Recipe
- 1 preheat oven to 315°f/160°c.
- 2 beat the egg, egg yolk, sugar and vanilla until well combined.
- 3 add the sifted flour and stir until smooth.
- 4 fold in the chopped walnuts.
- 5 using a teaspoon, drop dough mixture well apart onto parchment-lined baking tray.
- 6 flatten slightly with fork.
- 7 bake for 15-17 minutes (until golden and crisp).
- 8 allow to cool on trays.
