Sweet Ravioli

Ingredients
- 125 g cream cheese spread
- 1/4 cup caster sugar
- 1/2 cup dried apricot, chopped
- 2 sheets sweet puff pastry, thawed
- oil (for frying)
- caster sugar, extra, to serve
Recipe
- 1 blend cream cheese & sugar together, fold in fruit.
- 2 cut 3cm rounds out of each pastry sheet, using a scone or cookie cutter.
- 3 place a small teaspoonful of the fruit mixture into the centre of 16 rounds.
- 4 brush edges with a little water, top with second round & press edges to seal.
- 5 heat oil & fry ravioli a few at atime, turning until crisp & golden. drain on absorbent paper.
- 6 toss in extra sugar & serve with hot custard if desired.
