Sweet Ravioli

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 125 g cream cheese spread
  • 1/4 cup caster sugar
  • 1/2 cup dried apricot, chopped
  • 2 sheets sweet puff pastry, thawed
  • oil (for frying)
  • caster sugar, extra, to serve

Recipe

  • 1 blend cream cheese & sugar together, fold in fruit.
  • 2 cut 3cm rounds out of each pastry sheet, using a scone or cookie cutter.
  • 3 place a small teaspoonful of the fruit mixture into the centre of 16 rounds.
  • 4 brush edges with a little water, top with second round & press edges to seal.
  • 5 heat oil & fry ravioli a few at atime, turning until crisp & golden. drain on absorbent paper.
  • 6 toss in extra sugar & serve with hot custard if desired.
