Sugar Cookies

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • 1 cup butter, softened
  • 1 1/2 cups sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/2 teaspoons lemon juice
  • finely grated peel of 1 lemon
  • 2 3/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • additional sugar for rolling cookie (regular or coarse)

Recipe

  • 1 beat butter and sugar until smooth and fluffy.
  • 2 add egg, vanilla, lemon juice and grated lemon peel. mix well.
  • 3 stir together dry ingredients in a small bowl and add gradually to the creamed mixture until well blended.
  • 4 form rounded tsp of dough into balls and roll in sugar (if you use coarse sugar, it will look more "sparkly!").
  • 5 bake in preheated oven at 350f for 8-10 minutes, just until lightly browned on the bottom. (this makes a soft, chewy cookie; if you want crispier, bake until they're lightly browned on top.).
  • 6 allow to cool on pan slightly before removing to cooling rack.
