Stephyo's Tuscan Bruschetta

Ingredients

- 1 loaf crusty french baguette
- 2 tablespoons olive oil
- 1 red bell pepper, roasted and chopped
- 1 small eggplant, diced
- 1 tablespoon sun-dried tomato packed in oil, chopped
- 1 garlic clove, minced
- 1 teaspoon dried basil
- salt & pepper
- 1 cup mozzarella cheese, shredded
- garnish with green olives (optional)
Recipe
- 1 slice bread into one inch slices.
- 2 heat olive oil in medium sauce pan over med/high heat.
- 3 add all ingredients to pan except cheese saute for about 12 mins.
- 4 place each slice of bread on cookie sheet and top with shredded cheese and a tablespoon of sauce pan mixture and garnish with olives
- 5 heat oven to 425 degrees. bake about 12-15 mins.
