Season's Best Pumpkin Cookies

Ingredients

  • Servings: 12
  • 1/2 cup butter
  • 1 1/4 cups sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 (15 ounce) can pumpkin
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 (10 ounce) package butterscotch chips

Recipe

  • 1 in a large mixing bowl, beat butter with an electric mixer on medium to high speed for 30 seconds. add the sugar, baking powder, baking soda, cinnamon and salt; beat until well combined.
  • 2 beat in the pumpkin, egg and vanilla. beat in as much flour as you can with the mixer. stir in any remaining flour with a wooden spoon. stir in butterscotch pieces.
  • 3 drop by rounded teaspoons onto an ungreased cookie sheet. bake in a 375 oven for 8 - 10 minutes or until edges are lightly browned. remove cookies and cool completely on a wire rack.
  • 4 makes 60 cookies.
