Season's Best Pumpkin Cookies

Ingredients

- 1/2 cup butter
- 1 1/4 cups sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 1 (15 ounce) can pumpkin
- 1 egg
- 1 teaspoon vanilla
- 2 cups flour
- 1 (10 ounce) package butterscotch chips
Recipe
- 1 in a large mixing bowl, beat butter with an electric mixer on medium to high speed for 30 seconds. add the sugar, baking powder, baking soda, cinnamon and salt; beat until well combined.
- 2 beat in the pumpkin, egg and vanilla. beat in as much flour as you can with the mixer. stir in any remaining flour with a wooden spoon. stir in butterscotch pieces.
- 3 drop by rounded teaspoons onto an ungreased cookie sheet. bake in a 375 oven for 8 - 10 minutes or until edges are lightly browned. remove cookies and cool completely on a wire rack.
- 4 makes 60 cookies.
