Taku Glacier Lodge Ginger Cookies

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • 1 cup butter
  • 1 3/4 cups granulated sugar
  • 3/4 cup brown sugar
  • 1 egg
  • 1/3 cup molasses
  • 2 3/4 cups all-purpose flour
  • 1 1/4 teaspoons baking soda
  • 1 tablespoon cinnamon
  • 1 tablespoon ground ginger, plus
  • 2 teaspoons ground ginger
  • 1 teaspoon clove
  • 2 teaspoons nutmeg
  • 1/2 teaspoon salt
  • raw sugar

Recipe

  • 1 space oven racks evenly; preheat oven to 350 degrees.
  • 2 cream butter and sugars together until fluffy.
  • 3 beat in eggs and molasses.
  • 4 mix flour, baking soda, spices and salt; add to above, just until blended.
  • 5 using a small ice cream scoop, form walnut sized dough and dip into raw sugar; place on ungreased cookie sheet with sugar side up.
  • 6 bake 10-12 minutes for softer cookies, longer for crispier cookies; cookies will crack on top.
  • 7 excellent served warm!
