Walnut Pie Pockets

Total Time: 17 mins Preparation Time: 5 mins Cook Time: 12 mins

Ingredients

  • 1/2 cup sugar
  • 1/3 cup light corn syrup
  • 3 tablespoons butter
  • 1 large egg
  • 3/4 cup chopped walnuts
  • 1 teaspoon vanilla
  • 1 pinch salt
  • 1 -9 inch ready-made pie crust

Recipe

  • 1 preheat oven to 425*.
  • 2 in medium saucepan, melt butter over low heat.
  • 3 mix in eggs, vanilla, sugar and corn syrup.
  • 4 add in salt and walnuts.
  • 5 bring to boil, careful not to cook the eggs.
  • 6 simmer for 5 minutes until thickened.
  • 7 on lightly floured surface, roll out pie crust.
  • 8 cut out 3-inch circles with circle cutter.
  • 9 fill each circle with approximately 1 teaspoons of filling.
  • 10 fold the crust over and crimp edges with a fork.
  • 11 arrange on cookie sheet and bake for 10-12 minutes until golden brown.
  • 12 cool on wire rack.
