Walnut Pie Pockets

Ingredients
- 1/2 cup sugar
- 1/3 cup light corn syrup
- 3 tablespoons butter
- 1 large egg
- 3/4 cup chopped walnuts
- 1 teaspoon vanilla
- 1 pinch salt
- 1 -9 inch ready-made pie crust
Recipe
- 1 preheat oven to 425*.
- 2 in medium saucepan, melt butter over low heat.
- 3 mix in eggs, vanilla, sugar and corn syrup.
- 4 add in salt and walnuts.
- 5 bring to boil, careful not to cook the eggs.
- 6 simmer for 5 minutes until thickened.
- 7 on lightly floured surface, roll out pie crust.
- 8 cut out 3-inch circles with circle cutter.
- 9 fill each circle with approximately 1 teaspoons of filling.
- 10 fold the crust over and crimp edges with a fork.
- 11 arrange on cookie sheet and bake for 10-12 minutes until golden brown.
- 12 cool on wire rack.
