Summer Lemon Sugar Cookies

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • 2 3/4 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup butter, room temperature
  • 2 cups sugar
  • 2 eggs
  • 2 teaspoons grated lemon rind
  • 3 tablespoons lemon juice
  • 1 cup quick oats

Recipe

  • 1 sift together flour, baking powder and salt.
  • 2 in a large bowl, cream butter and sugar; add eggs, beating well.
  • 3 beat in lemon rind and juice.
  • 4 gradually add flour mixture, then stir in oats.
  • 5 chill dough thoroughly (at least 2 hours).
  • 6 roll level tablespoonfuls of dough into balls and place onto greased cookie sheets, allowing room for cookies to spread.
  • 7 using a flat-bottomed glass or custard cup that has been greased and dipped into sugar, flatten each ball to a 1/4 inch thickness (dip the glass into sugar each time).
  • 8 bake at 375 degrees f until lightly browned around the edges, about 8 - 10 minutes.
  • 9 cool on cookie sheet for 1 minute, then carefully move to wire rack.
