Chip Apricot Oatmeal Cookies

Ingredients
- 3/4 cup butter, softened
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 2 eggs
- 1 cup flour
- 1 teaspoon baking soda
- 2 1/2 cups rolled oats
- 2 cups chocolate chips
- 1 cup chopped dried apricot
Recipe
- 1 preheat oven to 375°f.
- 2 beat butter, sugar and brown sugar in large bowl until fluffy. add eggs; beat well. add flour and baking soda; beat until well blended. stir in oats, chips and apricots.
- 3 loosely form rounded teaspoonfuls of dough into balls; place on ungreased cookie sheet.
- 4 bake 7 to 9 minutes or until lightly browned; do not overbake.
- 5 cool 1 to 2 minutes.
