cranberry orange oat cookies

Ingredients

  • Servings: 3
  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 1 cup brown sugar
  • 1/3 cup applesauce
  • 2 eggs
  • 2 tablespoons orange juice
  • 1 teaspoon grated orange zest
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 dash ground nutmeg
  • 2 cups rolled oats
  • 1 cup fresh cranberries, roughly chopped

    Preparation Time: 15 mins Cook Time: 10 mins Ready Time: 30 mins

  • preheat oven to 350 degrees f (175 degrees c). grease cookie sheets.
  • in a large bowl, cream together the butter, white sugar and brown sugar until smooth. mix in the applesauce, eggs, orange juice and orange zest one at a time, mixing well after each. combine the flour, baking soda, cinnamon and nutmeg; gradually stir into the orange mixture. fold in oats and cranberries. drop by rounded spoonfuls the prepared cookie sheets.
  • bake for 8 to 10 minutes in the preheated oven. allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
