Zesty Lemon Squares

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup margarine, softened
  • 2 tablespoons low-fat plain yogurt
  • 3/4 cup sugar
  • 2 tablespoons flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1 egg
  • 1 lemon, rind of, grated
  • 1/4 cup lemon juice
  • 2 teaspoons icing sugar

Recipe

  • 1 combine flour, sugar, margarine and yogurt in food processor or blender.
  • 2 press evenly into lightly-greased 8-inch-square cake pan.
  • 3 bake at 325 for 25 minutes or until golden.
  • 4 topping: combine sugar, flour, baking powder, salt, egg, egg and lemon juice and rind in a food processor or bowl.
  • 5 mix well.
  • 6 pour topping over base and bake an additional 35 minutes or until top is set. sift icing sugar over top when cool.
