Zesty Lemon Squares
Ingredients
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup margarine, softened
- 2 tablespoons low-fat plain yogurt
- 3/4 cup sugar
- 2 tablespoons flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 egg
- 1 egg
- 1 lemon, rind of, grated
- 1/4 cup lemon juice
- 2 teaspoons icing sugar
Recipe
- 1 combine flour, sugar, margarine and yogurt in food processor or blender.
- 2 press evenly into lightly-greased 8-inch-square cake pan.
- 3 bake at 325 for 25 minutes or until golden.
- 4 topping: combine sugar, flour, baking powder, salt, egg, egg and lemon juice and rind in a food processor or bowl.
- 5 mix well.
- 6 pour topping over base and bake an additional 35 minutes or until top is set. sift icing sugar over top when cool.
